To make reconstituted liquid eggs

To prepare the liquid egg white, egg yolk or whole egg as in the fresh shell eggs, simply mix a proportion of the respective egg powder product with water, as indicated in Table 1.  One kg of the reconstituted egg white, egg yolk and whole egg liquid is equivalent to 32, 48 and 19 extra-large shell eggs (61 g) respectively.

Equivalent quantity of eggs per kg powder

For equal amounts of egg white, egg yolk and whole egg, one kg of the corresponding egg powder product is equivalent to 262, 108 and 77 extra-large shell eggs, respectively (Table2).
